Are You Ready for St. Patrick’s Day?

What are your plans for St. Patrick's Day? Will you be enjoying a parade? Lifting a pint at a local pub? Maybe frying up an Irish Breakfast?

I'm planning a large feast for March 16. Tomorrow I will begin baking- brown bread, Guinness brownies and cakes, sponge cake…  Friday I'll begin peeling potatoes to be made into colcannon and boxty or tossed into stews. Saturday I begin cooking corned beef. And Sunday I will spend the day in my kitchen (with a pint or two of Magners) as I put everything together.

The full menu will include Whiskey Glazed Corned Beef, Irish Stew, Steak & Guinness Pie, Shepherd's Pie (+ Shepherd's Pie biscuits for the kids), bangers with Guinness gravy, pasties, colcannon, boxty, Corned Beef & Cabbage Rolls, Car Bobm Cupcakes, Guinness brownies, gold filled cupcakes with rainbow frosting (for the kids), and sponge cake with jam and cream. I feel like there is more, but that is all I can think of right now.

My girls are especially busy this week – it seems everyone wants Irish dancers to perform this time of year. And then we will be in the local parade and do performances on Monday, St. Patrick's Day, as well.
