Daily Highlights

Add a day or two in Dublin
While our trip begins and ends in Dublin, the tour only includes on day in the city. If you would like to explore the city for a bit longer, Jody will help you plan your perfect itinerary.
Have a look at the County Dublin Travel Guide for inspiration.

Day 1: Welcome to Dublin
Arrive in Dublin before noon – Jody will have a room ready for bags. Arriving earlier? Jody will share a few self-guided walks so you can start exploring!
Our first official activity kicks off with the Flavour Trails storytelling tour, a delicious introduction to Dublin’s food scene and its rich history, shared through stories and bites. Afterward, we’ll roll up our sleeves for a hands-on ring-making session at Silverworks, where you’ll craft a one-of-a-kind piece to take home.
Spend the evening soaking up Dublin’s pub scene – live music, lively chats, and a pint (or two). Dinner is on your own, with plenty of great recommendations for you to choose from.

Day 2: Ancient Echoes on the Road from Dublin
On our journey to Adare, we’ll pause at two remarkable thin places – sites where history, landscape, and spirit seem to meet.
The first is the Rock of Dunamase, where castle ruins perch dramatically above the Laois countryside, offering sweeping views and centuries of history.
Then it's on to the Grange Stone Circle, the largest in Ireland and a powerful reminder of the island’s prehistoric past.
Arriving in Adare, we’ll settle into the elegant Dunraven Arms Hotel. This village, often called the prettiest in Ireland, invites you to wander past its storybook thatched cottages, discover centuries-old abbey ruins, and stroll along the riverside path.
This evening, we’ll gather for our first group dinner, a celebration of our first day exploring Ireland's countryside.

Day 3: Hooves & Talons
Today we turn toward the coast, but not without a couple of memorable experiences on our route.
We'll begin our day with a Hawk Walk with Adare Country Pursuits. Under the guidance of an expert falconer, you’ll experience the thrill of handling and flying a bird of prey.
Then we're on to the Donkey Sanctuary, a heartwarming haven where rescued donkeys are cared for – and always ready for a gentle scratch on the nose.
Continuing south we make our way to the colorful harbor town of Kinsale where we will be staying at the Trident Hotel, located on Kinsale's beautiful harbour.
Tonight, we’ll gather for a group dinner to toast the day’s adventures and enjoy a taste of Kinsale’s renowned culinary scene.

Day 4: Flavours of Kinsale
Start the day your way – browse the lively Kinsale Farmers Market, stroll the scenic Scilly Walk to Charles Fort with its sweeping harbor views, or simply relax and enjoy the comfort of your room or a gentle wander through town.
This afternoon, we’ll join Kinsale Food Tours for a delicious stroll through the town’s standout bites and stories. Then it’s off to Kinsale Mead Co. to discover how Ireland’s oldest known drink has been reimagined – and of course, we’ll sample a bit for ourselves.
We’ll spend a second night in Kinsale, with the evening free to follow your cravings. My personal favorite? Fish and chips by the harbor followed by a pint and live music in one of the town’s cozy pubs.

Day 5: Sipping & Strolling the Celtic Coast
Leaving Kinsale we travel through East Cork’s scenic countryside en route to the Midleton Distillery, where we’ll dive into the heritage of Irish whiskey on a hosted Jameson Experience.
Continuing along the coast, we check in at the luxurious Cliff House Hotel, where every room overlooks the sea. This is my personal favorite spot in Ireland for a seaweed bath* – and yes, there’s time built in to soak and unwind.
Those who wish can also join me for a hike along the Ardmore Cliff Walk – a stunning loop with sweeping sea views, early Christian ruins, and a dash of maritime lore.
We’ll end the day with an exquisite group dinner (and if the weather cooperates, we’ll dine al fresco) looking out over Ardmore Bay.
*Please note: seaweed bath or other spa services are optional and not included in tour cost.

Day 6: Coastal Paths to Country Elegance
We won't rush away from our cliffside luxury this morning, leaving time for a relaxing whirlpool or an early morning seaweed soak.
Continuing up the coast , we'll hop on electric bikes for a picturesque ride along the Waterford Greenway, with stops for touring and a picnic along the way.
If the weather isn’t on our side – or you’d prefer to skip the cycling – you’ll enjoy coastal touring and a visit to the Waterford Treasures museums in Ireland's oldest city.
After our excursion we'll wave goodbye to Waterford, taking the scenic car ferry across Passage East into Wexford.
Tonight’s stay is at the charming Dunbrody Country House, where the evening is yours to enjoy. Unwind in your luxurious room, wander the beautifully kept grounds, or stroll down to The Local, the on-site pub, for a bit of craic (and dinner, if you fancy).

Day 7: Seabirds, Sea Air & Seasonal Fare
Today we venture to the Saltee Islands, a remote, wildlife-rich haven off the Wexford coast. After a short ferry ride – and a bit of a clamber ashore – we’ll explore the island’s windswept beauty, home to thousands of nesting seabirds, including everyone’s favorite: the puffin.
Weather Alternative / Optional Touring: If seas are rough or you’d simply prefer to stay on the mainland, a local driver can be arranged to take you to the Irish National Heritage Park or along the scenic Wexford coast, with stops at highlights such as Hook Lighthouse – the oldest operational lighthouse in the world.
Back at Dunbrody House, we will gather for our final group dinner in The Harvest Room, where local ingredients shine in a beautifully curated meal.

Day 8: Sheepdogs & Scenic Stops
Turn back toward Dublin, and the end of our journey we will travel north along the coast and through Wicklow Mountains National Park, stopping to enjoy the rolling hills, glacial valleys, and postcard-perfect views that define this breathtaking region.
We'll end our journey in the most Irish (and cuddly) way possible, with a sheepdog demonstration featuring the stunning Wicklow Mountains as a backdrop.
From there, we’ll set our navigation for County Kilkenny to spend our final night together at a charming inn with a traditional pub in one of the most picture-perfect towns in Ireland.
You're very welcome to the Woodstock Arms in Inistioge.

Slán go fóill
Please plan your flight home for 1pm or later to allow for a relaxed morning.
We will leave Inistioge in enough time to allow our earliest fliers to arrive at Dublin Airport 3 hours prior to departure.
Whether your journey leads you home or onward to explore more of Ireland, it's “goodbye for now.”
It's been a week full of laughter, shared experiences, and new connections – and wherever you go next, may your travels be safe, joyful, and full of discovery.
