I had big plans for this week here at Ireland with Kids. I was going to share more tips for planning your Irish vacation. I was going to tell you all about my visit to the Titanic Artifact Exhibition at Union Station in Kansas City- and the other Irish fun we had there last weekend. I was going to do all that on top of planning an Irish Feast for Saturday and driving my daughter hither & yon for Irish dance performances.
Ah, I have more plans than time, it seems. So, as apology for not living up to my own expectations I'm going to share an easy- and tasty- dessert that I am making for my own festivities this weekend: Irish Tea Cake. I'm baking it right now, in fact.

Irish Stew * Steak & Guinness Pie * Bangers & Mash * Brown Bread
Shepherd's Pie * Boxty * Whiskey Glazed Corned Beef * Buttered Cabbage
Car Bomb Cupcakes * Magner's * Guinness * Smithwicks * Irish Coffee
Leprechaun Fizz (green carbonated water )
Of course this all happens after the St. Patrick's Day parade & more dance performances.
